I generally prefer medium rare to rare, but it depends on where I'm eating this steak.

If I'm ordering at a restaurant, I almost always will order it rare, because a restaurant is more often than naught going to overcook your steak, due to the whole busy kitchen atmosphere and negligent cooking, so I try to account for that in my order. I've been caught though... sometimes I've gotten steaks that are rare as hell... to the point where I can't eat it without sending it back.
