Shouldn't the variance keep your overall bankroll well over the ammount that you decide to use in one of your sessions? I am personally a sport punter (relative new to the world of poker) and even if I am able to get odds on a certain sport result that to me look completely wrong after having evaluated the event I never bet more than 5% (some even don't go over 3%) of my entire bankroll on it. Shouldn't the same logic apply also in poker, not in the moment when you bet, but when you sit in a table and you have to decide how much money you want to have available?
