I can do everything except figure out how to read the hole cards in real time, it doesn't seem like they are printed out to the dealer console in game or any logfile on the computer so I'm unsure as to how to go about doing this.

Maybe if you gave an idea which site you are wanting to get this information from, someone may have an idea how to do so?
