I agree with a few of the films above, Hotel Rwanda, Band of Brothers, Shawshank, and a bunch of other films where people overcome hardship, like Seabiscuit (even though it was telegaphed for the entire film).
A couple I'd add:
Silent Running.
Dances with Wolves (found the ending to be depressing).
