The only way to tone up is to build muscle. You can lose the gut easily enough by running but you will not "tone up"
If you want definition, weight train. Weight training does not have to be boring either. I used to love to run and hate to lift weights now it's the opposite.
For your calorie intake do a google search for calorie calcultors, they will estimate your daily goals, you may have to tweak these a little but they are a good starting point.
As a rough guide:
Cutting 10-12x our body weight(12 x 185) 2,220 calories/day
Maintanence 13-15 x body weight
Bulking 16-19 x body weight
