I think if you want a Belgian Beer you should go to
Chambar on Beatty. They might not have quite as many beer's as Stellas, but they're food is way better IMO. One of the cities best, actually.
For Thai downtown, go to
Urban Thai Bistro in Yaletown. Sala Thai used to be good, but it's been slipping of late.
