I don't have alot of time between classes, research, and work to eat well, but I will usually get 2-3 nights a week to cook so I will make enough to eat a couple meals or enough to freeze it. Here are a few things that freeze/reheat well

Stuffed Peppers:
Fresh peppers, 1 lb ground beef, 2 cans tomato soup, 1 can diced tomato (you can dice fresh yourself if you have the time), 1 cup rice, 2 cans tomato sauce

Brown beef and drain it. Add the soup, tomatoes to the beef and bring to a slow boil. Add the uncooked rice, add a little salt and pepper. Cook slowly until the rice is soft, usually about 15 minutes. While the rice is cooking cut out the tops of the peppers and get the seeds and junk out from the inside. When the beef/rice is done cooking spoon it into the peppers and put in a roast pan. Just toss the excess rice/beef into the pan. Pour the tomato sauce over the peppers they don't dry out in the oven. Cover roast pan and cook for about 45 min at 350 or until peppers are soft.

For some reason friends have found this recipe odd. I thought it was pretty normal but maybe its a PA Dutch or German type of thing. You can add some red peppers or jalapeno or something if you're in the mood for it.

Beef Stroganoff (need a crockpot)
1 lb beef cubes, 1 can cream of mushroom soup, 1 envelope lipton onion soup mix

Brown beef cubes in pan with a little oil, drain. Put the beef, soup mix, and soup along with about a 1/4 cup of water into crock pot. Set crock pot for 5 hours (not set in stone, meat should be very tender and almost melt in your mouth). Obviously this works best if you start it early in the day. Serve over some noodles or over some nice bread. Definitely add some parmesan.

You can make it without the crock pot, but your meat will not be very tender, I highly recommend it
