PokerTracker and PokerOffice are the tools of choice here. There are a lot of old threads on the comparisons which typically boil down to: PokerTracker supports more sites; Poker Office has a more intuitive UI. If you get PT, you'll also need to get PA HUD for the heads up display. PO already has a built-in HUD.

I did the trial versions of each and chose the one I liked better; that's what you should probably do too.
