#1. From your description, I have no idea what this is. I've never seen anything like it. Is it clear, like vinegar? Or is it black, like soy sauce mixed with vinegar?
#2. Yeah this is sesame oil with salt and usually pepper as well.
#3. This is Dwen Jang. It is fermented bean paste. It's the same stuff used to make Dwen Jang Jji Geh, if you've ever had that (it's a brown soup they usually give you at bbq's, it has tofu in it etc.)

I'm not exactly sure what #1 is either. #2 is often used to dip meat into. One of my favorite dishes is just unseasoned thinly sliced pork cooked on the grill. You dip it directly into the oil and salt mixture like a condiment.
When #3 is on your table, its generally used for putting on lettuce or dipping something like hot peppers into. You take a lettuce leaf, spoon the Dwen Jang on it, put in some rice, maybe a piece of dwaeji kogi in it, maybe some hot pepper slices or whole garlic cloves, and then, if you really want to do it korean style, you unhinge your jaw and you put the entire thing in your mouth, SNAKE-STYLE.
