#1. From your description, I have no idea what this is. I've never seen anything like it. Is it clear, like vinegar? Or is it black, like soy sauce mixed with vinegar?

#2. Yeah this is sesame oil with salt and usually pepper as well.

#3. This is Dwen Jang. It is fermented bean paste. It's the same stuff used to make Dwen Jang Jji Geh, if you've ever had that (it's a brown soup they usually give you at bbq's, it has tofu in it etc.)
