Lowest house edge and high enough table maximum to bet it all at one time. Roulette and Casino War have a higher HA (which doesn't matter so much since we aren't gonna be anywhere near the long term) but have a table max of $100 which means we couldn't do it in one shot. Some people have used craps pass line bets I think. I like Bac also because it is over fast and there are no decisions to be made (or screwed up). Obviously BJ isn't good when you are talking about a single big bet since the HA is pretty high if you can't double/split.
