Not having been to Vegas recently, and never having been to a club there, I really don't know which bars I'd trust to make my favorite drinks. Some of them, I'd still be prolly have to tell the bartender the recipe. However, here are a few things you can count on:
Manhattan. A true classic cocktail you should be able to get anywhere. Make sure they don't give it to you on the rocks, however.
I think I heard the Wynn poker room serves Fat Tire, a really great beer. If you play there, pick it up. You might also check out what other sorts of beer they have.
I think there's also a microbrew in one of the casinos, but I don't remember which. I'd definitely want to hit that up and try their offerings.
If you want to give gin another shot, get yourself a gin gimlet. It's gin and sweet lime juice, and is another simple classic that any bar will be able to make.
Another good one to try is a Gin Buck, which is gin, lime juice, and ginger ale. Really, though, you're probably better ordering it as "Gin and ginger ale with a lime squeeze, please." If you don't like gin, you could get a drink called a Horse's Neck, which is whiskey, ginger ale, a twist of lemon, and sometimes a dash of bitters.

Irish Rose: 2 oz Irish Whiskey, 0.5 oz lemon juice, 0.25 oz grenadine. Shake vigorously with ice, strain into a cocktail glass, garnish with a lemon squeeze.
Michael Collins (Tom Collins's brother): Take 2 oz Irish whiskey, 1 tsp superfine sugar, and 1 oz lemon juice, shake them with ice and strain them into a Collins glass (tall, narrow cylinder) with ice. Top with 2 oz soda water. Garnish with a maraschino cherry and either an orange wedge or a lime wedge.
Homemade Irish cream: Put all of the following into a blender
* 14 oz sweetened Condensed milk
* 1-3/4 cup Irish whiskey
* 4 Egg
* 1 cup Cream
* 2 tblsp Chocolate syrup
* 1 tblsp instant Coffee (powder)
* 1 tsp Vanilla extract
* 1/2 tsp Almond flavoring / extract
Blend until smooth. Let it sit in your fridge for a day, and then serve. Sometimes I rinse out the can of condensed milk with a little more whiskey, making sure I get all the milk, and making it stronger. This drink is very, very bad for you, but it is extremely tasty.
