Doubling up have two benefits. The first is, obviously, that you double your chip count. The second is that the double usually cripples if not completely takes out another player, unless your victim was a monster stack. At a 9 man stars SNG, doubling early effectively knocks out one player, thus giving you nearly 25% of the chips in play with 8 left. From that point on, a 50% ITM at minimum is sustainable (notice I said from that point on, you obviously won't double up early in every SNG you play).
