Depends on the age of the son/daughter, but I'm thinking that I'd have rules in place to not allow this sort of circumstance to occur. "No doors closed with opposite sex in the room" type stuff. I'd make myself seen often enough that there wasn't time to get to diddling in between my appearances, even if its just walking by the door or making a loud noise in the hallway.
One thing I'm certain that I'm going to do when my daughter starts dating is getting up for water/snack after going to bed when she's got a date over. I dated a few girls whose parents NEVER appeared after they went to bed. Parents are in bed, get naked (not totally, but functionally). If they had come out just one or two times when we had started dating and we were only making out it would have put the fear of God in me and we'd have been less likely to be "diddling." Trust me when I tell you that my daughter will always have the "no, my parents might come out for something to eat" excuse to keep the boys at bay.
