It all depends on the court/area. Where I play, we play to 11 straight up (ones only), with no backcourt violation. Theri s no standard rule for pick-up ball.
As far as fouls go, someone has to knock me on my ass or basically hit my face for me to call a foul. Most people play like this, and it's kind of a mutual respect thing. Also, defense should NOT be able to call fouls the way you described them as doing so.
