How do you order your steak?
 
Had a delicious Ribeye last night with a baked sweet potato and a large side of horseradish. In your opinion, what is the best way to get your steak cooked and what is your favorite cut of meat?

filets are great like this, t-bones, not so much. like I said, the best way is to figure out how you like different types of steaks.

I like Well, but most people don't know how to cook a Well steak. A Well steak is NOT cooked on a hot, open flame. A Well steak is slow cooked, so it gets cooked all the way through, doesn't end up burnt on the outside and stays juicy on the inside.

It takes a while to correctly cook Well steak.

In most restaurants, I think they'd consider this rare. If you look at where the steak has been cut, it isn't in the middle. The middle of the steak is probably a slightly darker pink/red.

medium rare

edit: actually might be rare hard to tell whether that's pink or red on the inside but it looks pink enough to be medium rare to me.

plus i'm colorblind

Most people don't know it, but slow-cooked well done steak like that is actually quite delicious. Good for pork chops too, and fish. You cook it at like 300 degrees for 30-45 minutes depending on thinkness.

However, you will never ever get that out at a restaurant so far as I know, and if you order a well steak at a restaurant they take the oldest steak, or a steak that someone else sent back, and they just char it, spit on it, rub it on the ground, and laugh at you when they serve it.

He's right, I like my steak medium, but to most places that means dripping blood, so I order medium well and get what should be medium.

I go with Medium-Rare.

I seldom get my steak undercooked. I don't mind Rare (seldom comes that way) or Medium (probably >50% of the time). Anything above Medium is a wasted steak IMO.

Crappy places overcook. Go to a good steakhouse..start with Jumbo Shrimp Cocktail or Lump Crabmeat if available. Med rare Porter, baked, creamed spinach, nice bottle of cab sav (03 Silverado or 04 Mondavi, if special go Mondavi or Beringer's 97 Reserve)...finish with coffee and slice of cheesecake and take the best crap of your life in the morning.

If you ever go to Outback you'll know what they're talking about--and at least they warn you before hand.

Anyway...I order medium in a restaurant. However, when I cook at home I usually like it closer to the rare side, so I guess I'm going to switch to medium-rare for restaurants.

I generally prefer medium rare to rare, but it depends on where I'm eating this steak.

If I'm ordering at a restaurant, I almost always will order it rare, because a restaurant is more often than naught going to overcook your steak, due to the whole busy kitchen atmosphere and negligent cooking, so I try to account for that in my order. I've been caught though... sometimes I've gotten steaks that are rare as hell... to the point where I can't eat it without sending it back.

Yeah, obviously most crappy places overcook, so then you get the places that like overcompensate to show they're not crappy by totally undercooking. WTF just cook it *right* it's a freaking steak it's not that hard. It makes it tricky to order cuz you either have to guess which way they error or you have to act like a douchebag to the waiter and be like "I want my steak medium rare, but if I order it like that is it gonna be overdone?" which only leads to problems.

I just order medium because I'm willing to eat steak in the medium-rare to medium-well range and ordering medium ensures I'll get something edible, whereas if I order medium-well it often comes burnt to a crisp and if I order medium-rare it often comes rare.

The last time I ate at an Outback, I had to send my steak back twice for being well done when I wanted medium rare. It came back the third time at room temp on the outside, so I told the manager we wouldn't be paying for our meal.
