OOT Iron Chef MINOR LEAGUE EDITION CONTEST #1

OK, if you wish that you could participate in the OOT Iron Chef, but are just completely outclassed by everyone there, this is the thread for you!

I made this thread because I was inspired by the competition to cook something good tonight, but I have neither the skill nor patience to cook the sophisticated stuff they do.

I figured there must be others like me who have been inspired to do some cooking by that contest!

mmm, can we do desserts in this one?

Re: OOT Iron Chef MINOR LEAGUE EDITION

What's the deal, we pick an ingredient and have to make an appetizer and entre using it?

If the ingredient is something pretty mainstream (I see they used bacon in one of the other ones) I'd be interested. I assume since this is the minors we won't be doing anything too crazy like on the TV show.

maybe just choose one dish instead of two since its the minors?

Re: OOT Iron Chef MINOR LEAGUE EDITION

Beef Tenderloin w/ medley of roasted baby potatoes, sweet potatoes, butternut squash, brussel sprouts, and red bell peppers.

Vegetables:

Quarter a few baby potatoes, cut up a red bell pepper into bite size pieces, add a few brussel sprouts and some pre-cut butternut squash pieces and sweet potato strips. Drizzle w/ tbsp of olive oil and toss w/ salt and pepper. Put in 400 degree oven for 40 minutes.

Steak:

Season steak w/ salt, pepper, garlic. Put on G5 Foreman Grill, high setting for 4 minutes (medium/medium rare, adjust to taste).

Put it all on a plate and enjoy with some nice red wine!

I like this idea. I think I'll have a hard enough time making one thing that isn't pasta or toast.

Chefs,

Week one the rules are COOK ONE DISH, WHATEVER YOU WANT.

That looks awesome. Sweet potatoes are awesome--much healthier and tastier than regular potatoes.

Completely appetizing.

Nice selection of starch and vegetables, too.

Wine choice?

Why not just incorporate this into the actual OOT Iron Chef competition?

You can pick a league to enter. I like the idea, but it is redundant.

I think it would be cool to have a thread for people to post pictures of food, no contest involved.

Re: OOT Iron Chef MINOR LEAGUE EDITION CONTEST #1

Ok, I happened to be making ribs tonight already so I guess I might as well post them. I had already started cooking the ribs so I don't have any prep shots but here is how I did it and the final results.

Ingedients

1) Go to Costco and buy a big ass thing of baby back ribs - the one in the airtight sealed packaging.

2) Also pick up at Costco Sweet Baby Rays BBQ sauce (this is the best stuff in the world), some Montreal Steak Seasoning, and Worcestershire Sauce.

http://img98.imageshack.us/img98/3408/img0364ht0.jpg

3) Get some of the instant frozen Jasmine Rice rice from Trader Joes. Also, pick up some broccoli from there.

Cooking

1) Preheat oven to about 325 degrees.

2) Put aluminum foil on some cookie sheets.

3) Place racks of ribs on sheets. (I usually cut the ribs into 2 bone pieces, but I was lazy this time)

4) Generously coat the ribs on both sides with the Montreal Steak Seasoning.

5) Place the ribs meat side down and cook for 45 minutes. Then flip the ribs over and cook for another 45 minutes.

6) Take ribs off the aluminum foil and put on a fresh sheet, being careful of all the grease. Turn up the heat on the oven to 425 degrees.

7) Place ribs meat side down and generously lather with Sweet Baby Ray's BBQ sauce. Cook for about 7 minutes and then flip over. Lather the meat side with BBQ sauce and brown for another 7-8 minutes.

8) Take ribs out and let cool.

9) Make the rice and broccoli now - however you want. I use the microwave for both. The instant stuff from TJs works really well. Then put the broccoli in a microwave safe bowl for like 3 minutes.

10) Cut the ribs into pieces (if you didn't do before hand).

Here's the finished product:

BBQ on Ribs:

http://img296.imageshack.us/img296/7360/img0355vj6.jpg

Ribs after browning:

http://img98.imageshack.us/img98/1340/img0356xd4.jpg

Ribs Plated: Usually I just throw the stuff on there, but here is my attempt at plating - meh, but the ribs taste effing good!

http://img172.imageshack.us/img172/7428/img0360rb5.jpg

http://img98.imageshack.us/img98/3868/img0361tm3.jpg

http://img296.imageshack.us/img296/7027/img0362fh5.jpg

I don't have a bbq at my place yet so I had to do the oven method. I actually find that the oven method works pretty damn well and actually my best ribs have come that way. The ribs brown really well and the meat falls right off the bone.

ed: "I think it would be cool to have a thread for people to post pictures of food, no contest involved." I think that's mainly what this thread is.

SU: WTF w/ rice and broccoli with those delicious ribs? How about some cole slaw and potato salad? Or any of countless other delicious and not that healthy sides.

SackUp 11-14-2006 03:05 AM

Re: OOT Iron Chef MINOR LEAGUE EDITION CONTEST #1

El D:

Yeah I usually go w/ either tater tots, fries, or potatoes for the starch and then some a cheesey brocolli caserole or something like that for the veggie or a good green salad. Though the rice and broccoli was not that bad of a combination.

I'll step it up for my next meal.

Oh and I had Red Seal Ale to drink. I also had a homemade snow cone for dessert.

JFC, a Foreman grill? Is this the minor leagues or little league? I do like the glass of red wine idea a lot though... and the food, if not the manner of preparation.

looks good but when I cook (or order from FatMatt's RibShack) I usually make/get enough to fill me up leaving no room for sides.

so i think a plate stacked w/ ribs would look good w/ something like a little garnish and a plate of wet wash cloths

Nice dish El D.
This reminds me that it's almost time for a pot roast. The weather is getting cold and some rustic meat and potatoes is in order.

Nice cuts on your veggies, El D. Looks like you've got some nice cross-hatching going on too, but that second "hatch" isn't very dark. The fix for that is to either flip(turn) the steak on to a hot part of the grill, or simply flip(turn) sooner. Looks good.

Those ribs look delicious, SackUp! The TJ's rice is quite good and sure comes in handy when you need rice quickly - I try to always have a box in the freezer.

SU,

Just a random thought I had, but you might shave some time from your browning phase by using the broiler. Not a huge difference but if you get it nice and hot it should be quicker.

Re: OOT Iron Chef MINOR LEAGUE EDITION CONTEST #1

CSC,

With all due respect to your cooking dominance over me, cooking a perfect steak is one area where I don't need any tips. This one, however, was a quick George Foreman grill effort. Still pretty damn delicious.

As for the cuts on the veggies, outside of the baby potatoes and bell peppers, the folks at Trader Joe's took care of that.

Remember, this is MINOR LEAGUE EDITION!

AEKD,

Fat Matt's is one of my favorite rib places anywhere. Do you ever get the brunswick stew? If not, you should get that for a side sometime.

Yeah, I do that sometimes as well. I don't do it usually though b/c I usually am using multiple layers of the oven as I cook multiple racks of ribs. So turning up the heat will brown both intstead of having to switch the ribs b/w the different overn racks. Either way definitely works though and the broiler method is probably quicker if you are just doing one oven racks worth of ribs.

Here is my entry.

It was posted in BBV and on my blog, but our masked chairman has approved it's posting here:

http://static.flickr.com/102/297829742_d0f67f5cfa.jpg

Pork chop:

I dredged the pork in flour, salt, pepper, garlic salt and thyme. I seared it on my skillet for about 1.5 minutes per side and then into a 350 degree over until it hit an internal temp of 160. After it was done, I removed the pork from the pan, deglazed the pan with a touch of veggie stock and reduced it to make a sauce.

The zuchinni was tossed with salt, pepper, coriander and olive oil. I sauteed it in a non stick pan for about 5 minutes per side on med- high heat.

The rice is just from a rice cooker.
