Just got done reading Chances are... by Michael and Ellen Kaplan. Highly recommend it. It is more history than advanced probability, but it does do a good job of summarizing, in about 300 pages, the origins, development and role of probability, statistics and game theory, and how they relate to other fields of science. Book is filled with interesting anecdotes about most of history's great scientists, stuff some of you probably already know, and it is by no means an advanced treatise of the topics, but for anyone who is interested but not expert in probability, I think you can learn a few things.
