would this be the right way to go about calculating odds of flopping a set?

(nCr(2,1)*nCr(48,2))/ nCr(50,3)

this comes out to like 8.7:1 but its 8.5:1 right?

I believe the 8.5:1 number is for flopping a set or better, i.e. a set, full house or quads. The method you outlined accounts for sets and full houses but not quads.

To calculate probability of flopping set, fullhouse, or quads, it would be 1 -(48/50 * 47/49 * 46/48) = 0.11755102

Or simply 1 - [ C(48,3)/C(50,3) ] = 0.11755102

Either I am totally wrong or you are, but the odds of flopping a set or better are 7.5-to-1.

Please, someone confirm!
