Since I just finished reading "All In" about the history of the WSOP, I've gotten interested in the evolution and development of the "Poker Boom". Does anybody know when these two big sites first started?

Wikipedia (http://en.wikipedia.org/wiki/Main_Page)

PartyPoker.com is the largest online poker card room. Launched in 2001, the site is run by Party Gaming, which says that, at peak times, Party Poker has up to 80,000 players logged-in.

PokerStars.com is the second-largest online poker cardroom.
Launched in September 2001, PokerStars.com is owned by a Costa Rican company, Rational Enterprises

I believe Paradise has been around as long or longer than Stars?

...and Planet Poker was around before Paradise (or anyone else). I believe Planet opened in 1999.

Pokerroom beats them all, operating since 1995 (though play money origionally).

Which makes you ask, whats up with their software...

The first real money hand on PokerStars was 9th September 2001... There were play money hands before that, but not sure on the date, and I don't think the site was public then. Party started around July 2001 I believe.
