I think I played this hand pretty grossly.
Villain is 21/14/1.4. His stat looks good but he's making weird bets, min raises etc.
My first instinct was I'm no good here but for some reason can't bring myself to fold because of the weird plays he's been making. Is this the kind of hand I should commmit myself to?
I probably should have 3bet pf and lead out the flop and go from there.

This is why I hate playing hands like AQs oop. You think we're ahead of his range after his flop raise? There's not much FE there since he's commited after his raise. I can't imagine any hands we beat that will call other than J10, or if he'll fold any hands that beat us if we push.

raise it to 2 pf bet out the flop if he calls.

i prob 3 bet or fold this pre tbh. id prefer to c/r flop but as played you have to push or fold that flop how often does he cbet?

3bet pre-flop.

As played do not lead the flop. Check call.

As played do not lead the turn. I like checking to let him shove his entire range.
