If I transferred my poker winnings to another players account and in return I get cash in person, can I just not put that in my income when I file for taxes? They will never find out right? How about if I use something like gatorpay's debit card and cash out in a random ATM?

Legally you have to justify the income no matter how it eventually comes into your hands. The paper trail has already been created when the wagers happened and the income was generated. The methods of transfer at this point are meaningless.
