Villain has shown a tendency to defend his big blind against obvious stealing posistions. He is capable of three betting from the blinds as I saw him do it a few times against a late position raiser. His overall stats were 26/19/2.5.

This is one of those situations that his betting didn't make any sense to me. On his flop raise, I eliminated AA-99, as I thought that he would 3-bet me pre-flop if you had any of those hands. I thought there was an outside chance at 88, but again I thought he would probably 3-bet preflop with 88 as well. 55 was a good possibility, but I figured I would call and see what the turn brought.

After the second 5 hit, I eliminated the fact that he could of had 55, and after his bet on the turn I thought for sure he had a weaker 10, a draw, or nothing.

How does that thought process sound?

I like rr the flop to define our hand, I have run into many aggro villains like this of late who love to re-pop, do it back if, he is defending i see him dropping it like a crack head gf. I think your thinking is fine but I like to define on flop.
