villain 31/6/1.5 only few hands...

I've got to bet the turn more right ?
It seems to me soooo fckn obvious that he is holding the flush here, b/c he made a small bet on the flop to see a cheap turn, then called my raise, called the turn bet and pushed that 3rd spade...

I had to bet moooooore on the turn so it would be an no-brain insta call 4 me...

do I have to call that everytime given 3:1 odds?! :/

You pretty much answered your own question.
Preflop and flop is perfect. I'd make it ~12 on the turn. Him betting $11 on the river then would be a much easier call.

I think I make a crying call here, because he might have some stupid two pair combination, its a blind steal, and I like to pay off when I have a set. I'm a showdown monkey, especially vs shortstacks.

bet the turn more - as you already know.
i call the river. I see him doing this with more than a flush.
i believe K7 or missed str8draw with QJ play this way too. He will sometimes even surprise you with some slowplayed flopped 2pair

I'd probly make it about 7 on the flop, probly 15ish on the turn and push whatevers left on the river even if the flush hit. If he called 2 big bets with a flush draw buddy list him. as played i think you should call river, he could have KT.

I second betting more on the flop and on the turn and I snapcall on the river.
