Do your best to "peek the poke", i.e., see how much money he has in his wallet or pocket. Don't play for more than that.

If you get far enough ahead that you are concerned he may not pay, find some excuse ("Excuse me, have to make a quick phone call... Sorry, gotta go.") to have to leave and settle up. If he pays with no problem, another phone call can change your plans if you want to keep playing.

You tell the club operator, who bars the fellow from future play until he pays up. You're out of luck for the money.

As an aside, the backgammon crowd is considerably more upscale than the poker crowd, as well as better known to each other. Most players in any club are regulars, and know each other very well. In 30 years of play, I was stiffed once, and he eventually made good (12 years later!). Exercise the same amount of prudence you would use on the street -- if a guy looks sleazy, he probably is.
