I don't know too much about villain. I know that he donkbets a ton with a moderately wide range of hands, and is really reluctant to fold to raises. His line is so bizarre in this hand that I have a hard time seeing the right move to make.

Folding the turn doesn't seem right, but do you check behind on the river? Two pair is pretty good, and I think a ten or queen might pay me. Fold to the check/minraise? He's such a goofball that it's hard to give him credit for a hand.

i play the same as you, maybe a little more on river, but this is fine. I think we are losing value by not betting this.

Raise his turn donkbet, you are probably ahead but have a highly vulnerable hand that you should protect. Fold to a 3-bet.

As played, check behind on the river, betting really seems pointless holding a medicore two pair, with a 4-straight out there.

Does anyone else not raise the flop here? I mean sure he could have a spade draw but he has double overbet the pot on the flop - what kind of strong hand does that? Given that his range is infinite I think I would flat call the flop. The reason being that a raise just folds out the one pair hands that would overbet the flop like this. I just think that raising the flop is playing this too fast given that we know nothing about villains range.

As played, given that he calls the flop raise I check behind on the river. There is no value in a river bet here IMO.

I think SB had JT type of hand, likely he holds a jack given he minraised the river and given the board.

At 25NL I wouldn't get too caught up in the meaning of bet sizes from random donks. The reason to raise is that your hand is both too strong BvB, and too vulnerable, to just play showdown poker.
