If I knew he was gonna call my shove on any river, would it be more profitable to wait and see if the board pairs? It sounds really weird in my head but I don't have a clue

I would assume no, you want to get in with the best of it. If the only way he can win is if the board pairs, you're winning this 9 of 10 times. With the flush draw, straight draws and everything else possible out there, getting his money in on the turn is the right play.

No, you got all the money in with the best hand. What more can you do? He re-raises to 16,5$, push-back. He won´t fold.
