I have somewhat limited my casino whoring adventures due to the possibility of later wanting to signup for RB at some of the poker rooms that are also tied to the various casinos. My concern is that the poker room will then say "well you are signed up under our sister casino and thus already have an account with us and cannot have rakeback". Is this a valid concern?

My other option is to use my wife's info to signup at the casino's. The only problem is, she has absolutely no clue about casino games, so if she had to talk to them intelligently to receive a cashout, it might not happen.

Yes, most sites credit the affiliate who gets the player first with all future play at sister properties, which could prohibit RB since you couldn't sign up under the RB Aff initially. That said, many sites also have completely different back end systems for poker and casino so you may be able to get away with it, so it could depend on the site. RB Forum I am sure has a better answer than mine lol.
