Just wondering how many hands you guys play at once? I have heard everywhere from 1,3,5.

As many as I am allowed, usually this means 5.

depends on the software, if it's fast I prefer 1. if it's slow I prefer as many as possible.

Which do you guys think adds more variance..
1.) Increasing the size of your bets
or
2.) Increasing the number of hands you play

Increasing bet size should increace variance more.

Say you bet $15 on one hand. Apart from a push, you will either win or lose this entire amount. If you bet $5 on three hands, however, you can win or lose the entire amount, but also win 1/3 or 2/3 of the amount as well. This cuts down on the variance as compared to betting large amounts -- but of course, it creates more variance than simply betting $5 on one hand.

One hand goes much faster than multi hand so I do one at a time with a higher bet.

It depends on how much you intend to increase your bet size. If you are doubling your bet size for all active hands, then you will increase variance less by adding an additional hand at your original bet size.

Basic $5 example, in order of increasing variance:
1x$5 < 2x$5 < 1x$10
